Recipe for barbecue fish in Nigeria

To roast your barbecue fish, you need the following items or ingredients.

A big fish. You can use any fish. Tilapia. Catfish or mudfish. Croaker. Any type of fish that you can think of. But the ones listed out are the best choice for barbecue fish.

  • Vegetable oil. You can also use olive oil

  • Ginger

  • Thyme, fresh or dry

  • Tomato

  • Rosemary, fresh or dry

  • Red bell pepper

  • Onion Cayenne Pepper

  • Lime juice

  • Garlic Cloves

  • Scotch Bonnet

  • Seasoning cubes or seasoning powder

  • Salt

How to Prepare Nigerian Barbecue Fish

Procedure for making barbecue fish:

Prepare your fish

This you do by scraping off the scales; trimming the fins; removing the gill from the head; removing other waste from inside the fish.

Make sure you do this neatly. Wash it thoroughly. Make deep cuts or incisions on the fish. This is what will allow the seasoning to penetrate well.

Prepare the marinade

Blend the cayenne pepper, rosemary, thyme, rosemary, garlic cloves, ginger root, and half of the onion. Pour these blended veggies into a bowl and add a teaspoonful of lemon juice and 2 tablespoonfuls of olive or vegetable oil. Mix them thoroughly till they blend well.

Rub in some quantity of the marinade on the incisions on the fish as well as on all the parts of the fish. Some people would love to deep into the fish inside the marinade.

If it is possible for you, go ahead. Leave the fish to marinate for a minimum of two hours. You can even leave it to marinate overnight. The taste actually gets better if it stays longer.

While waiting for the fish to marinate, chop the tomato, onion, red bell pepper, and scotch bonnet into tiny dice. If you can’t chop, you can use a rough manual blender. Also, blend the remaining garlic and ginger roughly.

Heat a little amount of vegetable oil in a pan and heat it. Add your chopped onion and wait for it to bring out some aroma. After that, add the chopped mix and seasoning. Sauté it for a few minutes and stir at intervals.

Set your oven on the grill

Place your marinated fish on the grill pan and grill for about five minutes and bring it out. Rub in the fried pepper sauce on it and inside the incised areas and return it to the oven to cook well.

Alternatively, for those who do not have an oven or who cannot use the oven, you can grill over charcoal. Just get a half drum and fill it with charcoal. Place your grilling net over the burning coal. It should not be too hot.

Turn sides to obtain an even grilling. Add the pepper sauce to the side you flip each time. In about 30 to 40 minutes, it should be done.

Serve with a glass of chill drink.
